Course Structure
Mexican Home Cooking offer
a fully bilingual culinary course spans the Pre-Hispanic
era to the present day, using family recipes from the
kitchen of Chef Doña Eulogia Silva Castillo in
the city of Puebla. She passed these traditional Mexican
recipes on to her granddaughter Señora Estela Salas
Silva, who is now sharing them with her students.
Hands-on Participation
For five days you will spend 2 to 2 1/2 hours per day
in the kitchen learning how to prepare recipes. You
will see demonstrations, techniques, and the use of
ingredients. Hands-on participation is key to the success
of our cooking classes.
Healthy - Light Recipes
Healthy eating is the emphasis of all selected recipes
and ingredients. You will learn to prepare regional
traditional favorites such as Mole Poblano and Chiles
en Nogada, along with lesser-known exotic dishes.
Personalized Attention
For maximum personal attention groups are usually limited
to four students with a maximum of six. We are open
year-round and have no minimum group size. Therefore,
very often we have just one student and there is no
extra charge if, as a result, classes are private. Recipes
of special interest can be covered on request. Longer
or shortercourses as well as reserved private lessons
can alsobe arranged.
Vegetarian Course
These classes can be adapted to individual needs. We
feature Pre-Hispanic and present day recipes that do
not sacrifice any of the traditional depth of Mexican
Cuisine.
This fee includes lodging, 3 meals
a day and 5 cooking classes. Lunch and dinner are served
with your choice of beer, wine or margaritas. You also
receive the printed recipes; equipment and chefs aprons
will be provided.

Accommodation
You will enjoy your Bed
and Breakfast style stay in the hacienda style
home of Doña Estela and her American husband
Jon Jarvis. This is not a resort, but a comfortable
family home where you will experience the routines of
a Mexican family in its kitchen. We offer spacious double
rooms with private baths and fireplaces.
Tutor
Mexican Home Cooking School
is almost unique in Mexico; in that it is owned and
run by a Mexican, teaching traditional Mexican
cuisine from its basics.
Señora Estela Salas Silva began
a classical culinary apprenticeship at the age of seven
under the tutelage of her grandmother and the women
of her family, according to the traditions of Mexico
that still existed at that time. Her experience in restaurants
began at age 9 in Mexico City and continued to San Francisco,
where she was Head Chef of her familys El
Rebozo Restaurant for many years. She has owned
and operated the Mexican Home Cooking School since 1996.
Location
You can reach us by flying into Mexico City and
then travel by luxury bus directly from the airport
to the city of Puebla or a shuttle flight to Puebla.
In either case we offer a complimentary pickup from
Puebla for the 45 minute trip to Tlaxcala and our Mexican
cooking school.
