These courses are NOT about toiling over masterpieces that take hours to prepare. And they have nothing to do with competing (though showing-off a little is permitted!) What these courses ARE about is acquiring enough skills and confidence to cook instinctively, for flavour and for aesthetic pleasure - a kind of simplified fun way of cooking but with plenty of zing and dash...
There are different courses with different subjects (from summerfood or entertaining to larder cooking) but the same vein runs through all: that of combining flavours which complement each other. Once you have mastered this simple method, you can go on to create an unlimited range of vibrant and original dishes which can in turn be adapted and re-invented according to the changing seasons - ultimately leading to the point where no recipes are needed.
This means that instead of shopping with a pre-written list (and finding some items are unavailable or not up to scratch) you simply buy what is fresh and at its best, and then create your own unique dish at home. That said, you will return home with all the information, checklists and recipes you need to create this new personal cuisine.
But these courses are not JUST about cooking - we have also thrown in visits to olive presses, goatscheese producers, winemakers as well as plenty of communal meals and picnics and even a bit of culture...
The best thing is that everything is included in the overall price: all accommodation, all transport (including airport transfers), all cookery and wine sessions and all meals! All you have to do is get yourself to Carcassonne airport.
