Holiday / Activity Overview:
A week to savour in colourful and vibrant Essaouira. Immediately upon arrival you are hit with spicy smells that combine with fragrances of incense and musk. You know you've left Europe. Essaouira is a remarkably charming place, very rustic but also relaxed and there's plenty of sunshine with an all year round temperate climate rarely dropping below 18 degrees. The town also boasts tremendous catches of fresh fish. The week of cooking comprises of 4 workshops where you'll get to prepare a range of recipes based on different menus. Monday - Workshop 1 - The heart of Moroccan cooking. Harira - traditional Moroccan soup followed by Lamb Tagine with almonds and dates or Beef Tagine with prunes and walnuts. Tuesday - Workshop 2 - Two firm favourites. Kefta sardines followed Moroccan patisseries. Wednesday - This is a full day's excursion. Exploring the countryside, flowers and Berbers communities. A day to experience & photograph (so bring your camera) a mixture of different subjects outside Essaouira including a local souk and a river valley walk. Thursday - Workshop 3 - A mix of savoury and sweet. Crevette briwat or Briouates - small pastillas made with prawns followed Chicken Pastilla. Friday - Workshop 4 - Traditional Friday. Naima and her mother Sara run the 4 cooking workshops. They are 'Souiri' people (from Essaouira - prenounced Asiweera) and therefore know their local cuisine. Moroccan women tend to be extremely talented and precise with their cooking, and their preparation is second to none. Both Naima and her mother speak English and the week will feel like your spending time with a family; you'll gain all sorts of insights in to Moroccan life. Your week will include trips to various souks as well as the cooking classes. Both Naima and Sara can tailor the week's menu to cater for vegetarians, as long as they know in advance! When your not rolling your sleeves up you'll be perusing the souks with your own personal shopping guide and assistant Ali or meeting Darren to arrange other activities for the afternoons. Essaouira is one of the most enchanting spots in Morocco and a much more relaxed destination than neighbouring Marrakesh. It’s both a laid-back port town and a chic seaside resort and has quietly become one of the must-visit places for independent travellers, artists, musicians and indeed shoppers who all descend here. Previously called Mogadur by the Spanish, Essaouira has a rich history of rulers including the Phoenicians and Romans. It was the Portuguese who held control in the 16th century before the town was re-conquered and returned to Arab rule. Referred to as Essaouira's golden age, the 17th and 18th Century created the wealth that marks the town's architecture including the hotel Riad Maison du Sud. A small town and as such easily accessible by foot, there’s very little hassle to be encountered which is perfect for browsing the souks.
