Four years ago she started her cooking holidays at Finca al-manzil using a life times collection of recipes and food ideas gathered from her travels in Morocco & the Middle East. There are some fondly remembered dishes from her Grandmother's cook gathered during long Summer holidays at her grandparents' home in Portugal as a child and later. Since living in Spain the collection has grown with some wonderful Extremeno dishes using the superb natural ingredients available in Extremadura. The new venture in Trujillo, the Conquistador Palacio holiday has produced some gorgeous recipes such as quails in rose petal sauce and chicken in a spicy chocolate mole.
A never ending journey through cultures, food, travel and knowing how to appreciate the simple pleasures which last the longest. Salud!
It was here that the cult of the conquistadors started resulting in the fabulous wealth to build palaces and churches in 16th century Extremadura, now beautifully preserved, especially in Caceres and Trujillo the birth place of Pizarro, conqueror of Peru.
Today communications are excellent, good roads connect Extremadura to the North and South, Portugal and France. Nearest airports are Madrid or Seville and soon the AVE high speed train linking Lisbon and Madrid via Caceres. The unspoilt nature remains with most notably the largest number of unique bird species to be seen in Spain, some unique in Europe especially at Monfrague National Park.
Every season has its particular delights. Spring, an explosion of wild flowers and lush greenery, perfect temperatures for hiking or riding, bird watching is at its best. Summer, green changes to gold but the cork and holm oaks remain green and vibrant, guaranteed sun in a blue, blue sky, it’s hot but still cool mornings and wonderful long, balmy nights.
Autumn is glorious, the first rain, the temperatures lower and the land becomes green again, grape and fig harvest, wine making. Winter is mild, very rarely freezes, time for the olive harvest, log fires and brisk walks in crisp sunny weather.
Extremadura has many micro-climates because of the mountains and the two mighty rivers that flow through, the Tejo and the Guardiana, e.g. The Sierra de Montanchez where Finca al-manzil is situated is famous for its jamon, cured in the mild, dry mountain air of this particularly beautiful sierra where there is still a donkey rush hour as the sun goes down.
The Extremadura contains 3 UNESCO world heritage towns, all in the Caceres province, Caceres, Guadalupe and Merida, all offering an exceptional experience and marvellous insights into history, art and architecture as well as having bustling centres with interesting shops, food markets, theatres, art galleries, lively bars and restaurants.
Besides the hundreds of village and town fiestas throughout the year there are two international festivals, WOMAD in Caceres takes place in May. The festival of theatre and dance takes place at Roman sites in Merida, notably the original Roman theatre, a unique experience during July and August. The Extremadura has it all, something to enthuse all ages and all tastes but most exceptionally the deep tranquillity, almost empty roads, a real feeling of discovery without being accompanied by crowds of fellow tourists, quite simply the extraordinary natural beauty to be encountered throughout this fortunate and friendly region.

THE CONQUISTADOR Feast holiday is based in the precious medieval town of Trujillo, a rare chance to experience the wonderful ambience of life in a 16th century Palacio with its wonderful secret courtyard gardens and swimming pool. We will eat dinner on a gorgeous portico overlooking the superb plaza of Trujillo. The cooking is based on the foods first introduced to Europe by returning conquistadors from Peru, Columbia and Mexico with their Aztec and Mayan and Inca cultures; chocolate, peppers, potatoes, maize, aubergines and tomatoes to name just a few.The Moorish history of Trujillo is celebrated with very special Moroccan dishes and of course some wonderful recipes from Extremadura using the exquisite ingredients available. There will be plenty of time to explore Trujillo and all its delights also an excursion to two world heritage towns, Caceres, a beautifully preserved medieval town and Merida a stunning town full of Roman history. The cooking holiday is open for a maximum of 6 people and minimum of 2 people. Discounts are available if you are able to arrange your own group of 4 friends or more. Pricing information
Prices on per head basis. Holiday includes 4 mornings cooking tuition of 2 -4 hours with some pre dinner preparation. All meals included except for snacks whilst on excursions. Entry fees also not included. In order to confirm a reservation we ask for a 30% deposit of total cost and the balance to be paid 6 weeks before arrival. The Palacio de Piedras Albas is in a magnificent position on the main plaza of Trujillo, it is still a family home, the rooms are charmingly disposed but do not all have en-suite bathrooms. There are shared twin rooms for friends or couples with bathroom shared with one other room ,single rooms with bathroom shared with one other room or large double bedrooms with en-suite bathrooms for couples only with price supplement. The palacio has huge reception rooms one with a Florentine loggia overlooking the main plaza, the dining room is a wonderful setting for our feasts. The gardens are surrounded by high walls covered in jasmine and roses with orange tree sheltered within. The swimming pool is next to the charming former stables where we will be preparing the food and eating outside.About the local area:
